I decided to go with the petite version for a few reasons:
1. Anything mini is super cute in my book.
2. I can make a stroopwafles (or a version similar)! (Created in the Netherlands and are a favorite in my house.)
3. Not only cane I shape them as a cone, I can make mini waffle bowls, and I can shape them to look like canoli and stuff them with something... i don't know what yet. The great think is that there are options. :)

I won't lie, it took a bit of time (2 different batches actually) to figure out how to get the cone just right, so that I could roll it without breaking it, but not soft enough that it turned out soggy. I think I am getting pretty close to having them look and taste the way I want.
I used one of my gluten-free waffle mixes, added some almond flour (for added taste and fiber), almond milk (instead of regular milk), and used unsweetened apple sauce + a flaxseed and water mix (to replace the eggs).
The gluten-free mix worked wonderfully in the waffle maker. Sometimes, you just don't know if a gluten-free or vegan recipe will be too delicate, but in this case, it worked so well. I am very happy.
Ahhh... I am excited to fill them and eat them now!! Okay, okay... In the picture on the right, you can see 1 cone filled with an ice cream. Well... I ate that. mmmm The cone held up nicely. It had a nice crisp crunch to it once I got down to the cone. :)
